Peachy Bread Pudding with Simply Peach® Recipe

Ingredients:

  • 1/2 cup Simply Peach
  • 3/4 cup heavy cream
  • 3/4 cup whole milk
  • 1/2 teaspoon almond extract
  • 2 large eggs, beaten
  • 1 cup sugar
  • 2 peaches, peeled and sliced
  • 1/2 pound day old brioche, cut into 3/4-inch thick slices
  • 2 tablespoons light brown sugar

  • 1/4 cup butter
  • 1/2 cup light brown sugar
  • 1/2 cup Simply Peach
  • 1/3 cup heavy cream
  • 2 tablespoons dark rum

Instructions:

  • Preheat oven to 325°.
  • Whisk together Simply Peach and next 5 ingredients in a medium mixing bowl.
  • Lightly grease an 8-x 8-inch baking pan. Layer bread slices and peaches alternately.
  • Pour cream mixture gently over the top; sprinkle evenly with brown sugar.
  • Bake at 325° for 30 minutes or until golden brown. Let stand 10 minutes before serving with Simply Peach Rum Sauce.

  • Melt butter in a small saucepan over medium heat.
  • Stir in brown sugar, Simply Peach, and heavy cream.
  • Cook over medium heat, 10 minutes, or until thickened, whisking occasionally.
  • Remove from heat and whisk in rum.

Yields 8 servings.
