It's the little things that make a holiday party. Simply Orange Juice has an easy recipe for Mini Gingerbread Houses to get you in the holiday spirit. Just bake and decorate with your favorite cookies and seasonal candy.
In a large saucepan, cook sugar, shortening, Simply Orange, and molasses on low, stirring constantly.
Remove from heat; add cinnamon, baking soda, and salt. Stir in flour, 1 cup at a time.
Roll dough on a lightly floured surface; knead until even in color and smooth, adding more flour if needed. Form into a log. Cut into five equal pieces; wrap in plastic wrap. Cut patterns out of paper or cardboard.
Line a baking sheet with foil and lightly grease. Unwrap one portion of dough and roll out on baking sheet. Position patterns at least 1/2 in apart, then cut with a sharp knife. Remove patterns and dough scraps.
Bake at 375° for 10-14 minutes. Remove from oven. Use patterns again to trim off excess cookie. Cool 3-4 minutes.
Carefully remove to a wire rack to continue cooling.
Icing and Assembly:
In a large bowl, beat powdered sugar and Simply Orange on low until blended. Beat on high for 8-10 minutes, adding additional Simply Orange if needed.
Fill decorating bag two-thirds full with icing.
To assemble house pieces, squeeze a thick line of icing onto the desired edge. Press to joining edge, then use spice jars to position for 2-3 minutes or until icing hardens; repeat for all pieces.
If needed, squeeze icing along the inside edge of all pieces and corners for added stability.
Add a chimney if desired. Decorate the house with remaining icing, candies and cookies of your choice.
Yields approximately 8 houses.
