Leftover Turkey
Soup Recipe

Wondering what to do with leftover turkey? Turn your post-Thanksgiving cravings into the perfect late afternoon dish with our Leftover Turkey Soup recipe!


  • 2 tablespoons butter
  • 1 small onion, chopped
  • 2 ribs celery, chopped
  • 2 carrots, chopped
  • 1 clove garlic, chopped
  • 1/2 cup long grain and wild rice mix (from a 6 ounce package)
  • 1/3 cup dried white wine
  • 5 cups chicken stock
  • 3 cups leftover chopped cooked turkey
  • 3/4 cup whipping cream
  • 2 cups chopped Lacinato kale
  • Salt and Pepper


  1. Cook onion, celery, and carrots in butter in a large Dutch oven over medium-high heat 10 minutes, or just until softened. Stir in garlic and cook 1 minute. Stir in rice and white wine. Let cook 2 minutes. Stir in chicken broth, turkey, and seasoning packet from rice.
  2. Cover and cook 15 to 20 minutes over medium-low heat, stirring occasionally.
  3. Reduce heat to low and stir in cream and kale. Season to taste with salt and pepper. Add additional chicken stock if a thinner consistency is desired.
  4. Serves 6
