Ingredients:
2 tablespoons butter
1 small onion, chopped
2 ribs celery, chopped
2 carrots, chopped
1 clove garlic, chopped
1/2 cup long grain and wild rice mix (from a 6 ounce package)
1/3 cup dried white wine
5 cups chicken stock
3 cups leftover chopped cooked turkey
3/4 cup whipping cream
2 cups chopped Lacinato kale
Salt and Pepper
Instructions:
Cook onion, celery, and carrots in butter in a large Dutch oven over medium-high heat 10 minutes, or just until softened. Stir in garlic and cook 1 minute. Stir in rice and white wine. Let cook 2 minutes. Stir in chicken broth, turkey, and seasoning packet from rice.
Cover and cook 15 to 20 minutes over medium-low heat, stirring occasionally.
Reduce heat to low and stir in cream and kale. Season to taste with salt and pepper. Add additional chicken stock if a thinner consistency is desired.
